This Easy Vegan Fried Rice is a delicious, hearty dish packed with protein from tofu and bursting with vibrant veggies. Perfect for a quick weeknight dinner or a satisfying meal prep option, it's a hit with vegans and non-vegans alike!
Start by pressing the tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes.
While the tofu is pressing, cook the brown rice according to package instructions. Once done, set it aside to cool slightly.
After pressing, cut the tofu into small cubes. Heat a non-stick skillet over medium heat and add a splash of oil. Once hot, add the tofu and sauté for about 10-15 minutes, turning occasionally until it's golden brown and crispy.
In the same skillet with the tofu, add minced garlic and cook for 1 minute until fragrant. Then add the chopped green onions, peas, and carrots. Sauté for another 5-7 minutes until the veggies are tender.
Stir in the cooked rice, tamari or soy sauce, peanut butter, and brown sugar. Mix thoroughly to combine all the flavors and heat through for about 5 minutes.
If you like a kick, add chili garlic sauce to taste and drizzle with toasted sesame oil if using. Stir well to incorporate.
Taste and adjust the seasoning with more soy sauce if desired. Once everything is well mixed and heated, remove from heat and serve warm.
