Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel, place it on a plate, and set a heavy object on top for about 10 minutes.
While the tofu is pressing, prepare your vegetables. Mince the garlic, chop the green onions, and grate the fresh ginger.
Once the tofu is ready, cut it into bite-sized cubes. Heat the canola or grapeseed oil in a large skillet or wok over medium-high heat.
Add the tofu cubes to the skillet and cook for about 8-10 minutes, turning occasionally until golden and crispy on all sides.
