A hot, sour, aromatic Thai soup that wakes up every sense. Lemongrass, galangal, lime leaves, and chilies create a broth that is both bracing and deeply satisfying. Loaded with shrimp and mushrooms, it is the best thing you can eat when you need a flavor reset.
Bring stock to a boil. Add lemongrass, galangal, lime leaves, and chilies. Simmer for 5 minutes to infuse.
Add mushrooms and cook for 3 minutes.
Add shrimp and cook until pink, about 2-3 minutes.
Remove from heat. Stir in fish sauce, lime juice, and sugar. Taste and adjust the balance of sour, salty, and spicy.
Ladle into bowls and garnish with fresh cilantro. Serve with steamed rice on the side.
