Pan fry the black pepper and garlic over medium heat until fragrant.
Add the extra virgin olive oil and infuse for 1 minute.
Add the chopped tomatoes and salt, then cover with a lid.
Simmer for 5 minutes.
Remove the lid and mash the tomatoes.
Reduce the mixture until you reach your desired consistency.
Make craters for the eggs in the tomato mixture.
Lower the heat and carefully crack the eggs into the craters.
Cover the eggs and cook for 5 minutes without lifting the lid.
Remove from heat and let the residual heat steam the eggs for 1-2 minutes.
