This delightful banana bread is a warm hug in loaf form, perfectly moist and bursting with banana flavor. It's the ideal treat for breakfast, a snack, or dessert, making it a favorite for both family gatherings and cozy nights in!
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon until well combined.
In another bowl, cream the unsalted butter and brown sugar together until light and fluffy, about 3-4 minutes.
Add the eggs one at a time to the butter mixture, beating well after each addition. Then stir in the Greek yogurt and vanilla extract until smooth.
Fold the mashed bananas into the wet mixture until evenly incorporated.
Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. If you’re using nuts, fold them in at this stage.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
